Roots Beneath the Soil

Carrots and beetroots are examples of vegetables where the large root is the part we usually eat. The root grows beneath the soil while leaves grow above the ground.

Potatoes also grow underground, but a potato is not a root. It is a swollen underground stem called a tuber. Small buds on a potato are often called its eyes.

Vegetables Made of Leaves

A cabbage looks like one large round vegetable, but it is formed from many leaves packed tightly together.

The outer leaves wrap around the inner leaves. Look at the curved lines in a cabbage coloring page and imagine how the leaves overlap.

What's Inside a Pea Pod?

Pea plants produce pods. Inside a pod, round peas grow in a row. An opened pod makes it easy to see how the peas fit together.

Green beans are pods too. Their long, narrow shapes look different from the shorter pea pods filled with round peas.

Layers Inside an Onion

Onions grow as bulbs. Their layers are wrapped closely around one another. From the outside, an onion may look smooth and simple.

Cut an onion across the middle and the layers become much easier to notice. They can form curved circles or rings around the center.

Bumps, Ridges and Smooth Surfaces

Vegetables do not all have smooth skins. Bitter gourds have strongly textured, bumpy surfaces that make them easy to recognize.

Pumpkins often have broad ridges running from the stem toward the bottom. Bell peppers and eggplants can have smoother, curved surfaces.

Cauliflower Has a Different Shape

A cauliflower has a thick cluster of tightly packed flower buds. This pale central part is surrounded by leaves.

Its bumpy, cloud-like shape looks very different from the flat layers of a cabbage or the long shape of a carrot.

One Vegetable, Different Names

Some vegetables have different English names in different places. The vegetable called an eggplant in the United States is also called a brinjal in India and an aubergine in the United Kingdom.

The names may change, but they can all describe the same familiar vegetable. Words can be different around the world, just like foods and ways of cooking.

You can look at real vegetables for color ideas or invent your own. Try a rainbow pumpkin, a bright blue carrot or a purple-and-yellow cabbage.
